Seared Scallops Asparagus Cream Sauce

2/3 cup finely chopped onion

1 cup asparagus tips (about 1inch lengths)

¼ cup bacon bits

¼ cup finely chopped sundried tomatoes

¼ cup finely chopped fresh basil

½ cup white wine

¼ cup cream cheese

1 cup crème

1 tbsp extra virgin olive oil

1-1/2 cups 40/60 scallops

Salt and pepper to taste

1 pkg penne pasta (follow directions on the box)

 

In a large stock pot, cook pasta according to instructions

In a large non-stick fry pan over med/high heat, add olive oil.  Warm oil for 1 minute then add onions and bacon and sauté for 3 minutes. Add sundried tomatoes, cream cheese, cream and wine bring to a gentle boil for 3-4 minutes then add fresh basil and asparagus and scallops.   Continue to cook for 3 minutes (drain water off pasta) add warm pasta season with salt and pepper.  Remove from heat and serve in big bowls.

 

Garnish with fresh grated parmesan cheese
