Tomato Almond Pesto Pasta

Delightfully different and delicate layer of flavours.

Ingredients

¼ cup roasted almonds, whole
1 ½ cups of fresh grape tomatoes
½ cup fresh basil
1 clove of garlic, mashed
pinch of red pepper flakes
1/3 cup of extra virgin olive oil
1/2 cup Nutrafarms bacon, sliced
1 x 375g spaghetti noodles
2 Tbsp. Parmesan cheese, shredded
salt and pepper to taste

Directions

Toast almonds in a small skillet over medium heat for 3-4 minutes. Cool to room temperature.

In a food processor add the cooled almonds, basil, garlic, red pepper flakes, tomatoes and purée for 1–2 minutes until smooth.

On a low speed slowly drizzle olive oil in. Season with salt and pepper.

In a large stock pot over high heat cook pasta. Cook for 4 minutes and then drain.

While pasta is cooking in a separate pan, over medium heat, fry off bacon, add cooked pasta and pour sauce over pasta.

Place in 4 warm bowls and garnish with Parmesan cheese.
