Cambazola Shrimp Sauce over Pasta

Description

This is comfort food for sophisticated tastes. It is easy to prepare with a WOW factor.
ChefD Tip: When cooking with white wine I always recommend chardonnay because it has a bigger flavour for dishes.

Ingredients

1 cup sun-dried tomatoes, julienne sliced
1 onion, finely chopped
1 cup of bacon, finely chopped
1/2 cup of basil, finely sliced
1 cup shiitake mushrooms, sliced
6oz of Cambazola cheese, sliced into small pieces
2 cups of cooked shrimp
1/2 cup of white wine

Directions

In a large non-stick frying pan over med/high heat add onions, bacon and sun dried tomatoes and sauté until bacon is almost cooked, about 4-6 minutes.

Add cheese, mushrooms, wine and basil and continue to cook until all the cheese is melted.

Stir in the shrimp and continue to cook for 3-5 minutes until shrimp is warm.

Serve over your favourite pasta, quinoa or rice.
