Stein & Dine Warm Potato Salad

Description

This is the recipe that was demoed on the Stein & Dine Stage 2017

Ingredients

2 small onions or one large Spanish, finely chopped
1 Tbsp. butter
¼ cup fresh dill, chopped
1 cup chorizo, diced
1 Tbsp. chives, chopped
1 cup frozen corn or fresh (when in season)
1 cup Gay Lea sour cream
½ cup Gay Lea cottage cheese
½ cup parmesan cheese
Juice of 1 lemon
2lb baby potatoes, sliced and cooked
salt and pepper to taste (watch how much salt as there is salt in the cheese)

Directions

Preheat oven to 350F degrees.

In a large non-stick fry pan over med/high heat sauté butter and onions and cook until the onions start to caramelize (look opaque) then add chorizo.

In a large mixing bowl, combine potatoes, sour cream, cottage cheese, onion mix, chives, corn, fresh dill, and parmesan cheese.

Mix well and season with salt, pepper and fresh lemon juice.

Place salad into a grease 9x12 baking pan and bake for 30 minutes at 350F. Serve warm.
