Scallops in a Corn Relish

This is a easy favourite of many people who LOVE to shine for their guests.

Ingredients

4 -10 dry Scallops
2 Tbsp extra virgin olive oil
¼ cup finely diced red peppers
1 Tbsp finely chopped chives
¼ cup finely chopped onions
¼ cup finely chopped double smoked bacon
1 tsp finely chopped fresh cilantro
Season with salt and pepper

Directions

In a cast iron or thick bottomed pan over med/high heat add olive oil then scallops and cook for 2 minutes on each side.

For the relish heat a large non-stick Fry pan over med/high heat.

Combine all ingredients and sauté for 5-7 minutes

Place relish on a plate and place cooked scallop on Relish season with salt and pepper.

Serve with pleasure.
