Roasted Pear and Arugula Salad

Description

The extra time taken to roast off the pears is well worth the beautiful sweetness in this elegant salad.

Ingredients

2 cans (170 g each) Gold Seal flaked white tuna, drained
2 Tbsp melted butter
juice of one lemon
2 pears peeled and cored, cut into slices
¼ cup aged balsamic
¾ cup extra virgin olive oil
1 pkg of baby Arugula (enough for 4 servings)
300 g goat’s cheese

Preheat oven to 400°

Pour melted butter and lemon juice over sliced pears in a bowl and stir pears until coated.

Place pears on a parchment lined baking sheet and roast pears until they start turning golden brown, about 7 to 9 minutes.

In a small container add balsamic and olive oil, stir well and set aside.

On four plates, place arugula salad, crumble tuna over, followed by roasted pears & goat’s cheese.

Drizzle with balsamic vinaigrette and serve.
