This garnish, is not only a colourful, but a flavourful accessory to any seafood dish.  A sexy appetizer to any dinner is using a single U-10 scallop on a plate with the Corn Relish.

Ingredients

1 cup frozen corn thawed and drained
1 red pepper finely diced
1 cup green onions finely sliced
1 tsp finely chopped ginger
1 tsp finely chopped cilantro
2 Tbsp extra virgin olive oil
Juice of one fresh lime
Season to taste with salt and pepper

Directions

In a large non-stick fry pan over med/high heat add oil, corn, peppers, ginger and green onions sauté for 2 minutes.

Add cilantro continue to sauté for 2 minutes, then add lime juice and season with salt and pepper keep warm and set aside.

Serve over salmon, scallops or where ever your imagination takes you. A great mixture of colour and taste!
