Coconut Clam Chowder

Description

Clam chowderNot your common flavour but it will make you a rock star in the kitchen and create a NEW family favourite!

Ingredients

1 can (142g) Gold Seal Baby Clams
1 red pepper, finely diced
1 cup onion, finely diced
2 Tbsp dried chives
2 Tbsp dried lemongrass
1/4 cup bamboo shoots
1/4 cup chopped water chestnuts
1 can (400ml) coconut milk
1 container (900ml) vegetable stock
1/2 tsp chipotle powder

Directions

In medium size stock pot over med/high heat sauté off onions and red pepper for 2-3 minutes.

Add dried herbs and chipotle powder to onions and peppers, continue to sauté 2 minutes.

Add clams, vegetable stock, coconut milk and bamboo shoots.

Serve warm in a bowl.

Bring to a gentle boil than reduce heat to a simmer and simmer 1 hour.
