Ingredients

½ cup celery, finely chopped
½ cup onions, finely diced
½ cup carrots, sliced
½ cup corn
1 cup Gold Seal Clams drained
2 Tbsp fresh basil, finely chopped
2 Tbsp of Extra Virgin Olive Oil
Salt and pepper to taste
2 cups cooked Quinoa (follow directions on package)

Directions

In a large non-stick fry pan over med/high heat add olive oil and heat til it is shiny and coats the pan add onions, carrots, celery and corn sauté for 2-3 minutes

Add clams and basil sauté for 2-3 minutes and season with salt and pepper

Serve over warm quinoa.
