Arugula and Mango salad

Ingredients

1 container fresh arugula
1 mango, cut into thin slices
1/2 cup dried cranberries
1/4 cup white balsamic vinegar
3/4 cup extra virgin olive oil

Instructions

In a small mixing bowl whisk together the oil and vinegar.

In a large mixing bowl drizzle dressing over arugula and place on six chilled plates.

Garnish with mango slices and dried cranberries

Chef's Tip: You can substitute spinach for the arugula.
